Emily Benson: Honestly, I’d have to say cucumbers!
PlantBased.com: How often do you eat bananas and cucumbers?
Emily Benson: I eat at least one banana a day – whether it’s in a smoothie or by itself I try to always keep fresh + frozen bananas on hand. I eat cucumbers multiple times a week. I put them in everything – salads, sandwiches, juices, dipped in hummus, or even in my water. My favorite though is eating home grown cucumbers whole!
PlantBased.com: Why do you like bananas? Figs?
Emily Benson: I like eating bananas because they are filling and help moderate blood sugar levels. I also find they’re easy to eat when you don’t feel like eating but know you should eat something (which is me a lot). They’re also super easy to grab on the go – which is me all the time!
My grandpa had a fig tree in his back yard and growing up I’d climb up between the thick branches with massive leaves and pick the fresh sappy fruit when it was in season. He would then use the fruit to make his famous fig muffins and freeze the rest for us to enjoy year-round. My parents now live in his house and I still love to go over there and pick figs when they’re ripe – not only for the tasty, fresh flavor but also for the memories.
PlantBased.com: Why do you like cucumbers?
Emily Benson: Cucumbers are my go-to snack when I want something refreshing. Cucumbers are made mostly of water and are low in calories so I don’t feel bad chomping on them all day long. They’re also hydrating and high in Vitamin K and antioxidants!
