Japanese Gnocchi with Nori Spice

Today’s recipe presents an Italian classic with an Asian twist!  With savory nori, earthy miso, and fresh ginger infusing its tomato-, onion-, and garlic-based sauce, our vegan Japanese gnocchi with nori spice is a dish you won’t soon forget.

For a healthy boost, we’ve also replaced the olive oil with almond butter and the salty Parmesan with nutritional yeast!

Ingredients

1 onion

2 garlic cloves

1 oz peeled fresh ginger

4 baby bok choy

4 stems green onions

1 cup corn

1 lime

1 package gnocchi

1 T nori spice (or crushed nori flakes)

2 T miso paste

2 T tomato paste

2 T almond butter

2 T nooch (nutritional yeast)

Instructions

  1. Heat large pot of salted water to a boil and cook gnocchi until it floats to the top.
  2. Drain and rinse gnocchi, reserving 1 cup of pasta water.
  3. Mince onion, garlic, and peeled ginger. Chop bok choy.
  4. Juice lime and thinly slice the green onion stems. Reserve for later.
  5. Add cooked gnocchi to a skillet and cook until browned. Add small splashes of water if sticking.
  6. Remove gnocchi from skillet and toss with nori spice.
  7. Return skillet to medium-high heat. Add minced onion, garlic, and ginger.
  8. Add lime juice, ½ cup reserved pasta water, miso paste, tomato paste, almond butter, nutritional yeast, and salt to skillet.
  9. Mix all ingredients until well combined. Add pasta water as needed for desired sauce consistency.
  10. Add bok choy and corn. Cook only a minute.
  11. Portion miso tomato sauce into bowls. Top with browned gnocchi, lime wedges, green onion slices, and more nori spice. Mix all ingredients until well combined. Add pasta water as needed for desired sauce consistency.
